Since GT5 never used any aids except weak ABS. Now I have to use TC at 1 otherwise I lose to much time. Is it me or GT7 harder?

Simple answer. Only ABS for online or custom races, everything else turned on to max for all the stupid tests PD dream up on their slippery, deliberately designed to make you crash, frustration extravaganzas ;-)

I always use default abs, when it comes to tc it just depends on the car and tires. It seems no TC isn’t the outright fastest anymore like it was in GTS.

Yes, RWD cars are a lot harder in GT7.

Personally I'm sticking it out without TCS. Sports Soft tyres help, as does a rear wing. And then just taking time to get used to treating the throttle very gently.

I think it's a bit exaggerated myself, but then previous games were probably too stable/easy, at least this is a more interesting challenge!

Real cars have tcs, no shame at all in using it in game. In most cars I'll start with tcs on and dial it back bit by bit to find my sweet spot. Some cars it's 0, but for most it's somewhere between 1 and 3. On the cars that are low powered I'll start at 0 and add if needed.
ABS I usually have set at weak. In GT7 I set it at that at start up and havent changed it again. I'll play around with it once I have a few cars that will become my regulars to see what it does.
ASM and Countersteer off. Although I'll give them a try on some of the more fidgety RWDs.

Quite simply... just drop all prejudices and try it yourself without being ashamed.

There are many cars that can be driven quite well as long as they are not extremely tuned, but there are also cars that, especially with maximum tuning, simply become undriveable without the appropriate helpers. An example: Take the Corvette C7 ( not the GT car but the street version ) with tuning parts it achieves almost 1000 nm of torque and around 800 hp.
This force is simply let loose on the rear wheels and to drive something like that in real life without electronic helpers would be more than tired of life. So just turn on the helpers and test what you need to be as fast as possible. My opinion is that the "speed" increases first when there are no major mistakes, i.e. you don't cause any more accidents, and only then is it about getting the last tenths of a second out.

In my opinion, no one needs to be ashamed if they ride with helpers and if they can keep up with them in the race or even win... then there's nothing wrong with that.

I have everything turned off, because that's how I enjoy the game. The game is more tricky without aids compared to previous games but certainly playable.

You should use whatever aids allow you to enjoy the game

The best drivers will use the driving aids which give them the most advantage. If TCS 3 is the fastest, you bet the best guys will be using that. Prior GT's the fastest way around the track has been all aids off aside from ABS which was set to default. I imagine this game will be the same, and if you want to the the fastest, you will have to learn that. If you don't want to be the top 1% use whatever makes you enjoy the game the most.

As with everything in life “it depends” on preference, experience you want, competitiveness etc.

For me I use them when I need them and turn them off when I want a Sunday morning just me and the rising sun and a Porsche round the ring

I whined about the RWD physics in the physics thread, but since then I've become used to avoiding death in GT7, and mostly drive with no aids except ABS Default.

That said, in extremely powerful cars like the C6 ZR1 and/ or driving in the wet, I do need TCS1 to not crawl out of corners like a tortoise. Doesn't mean I could throw the car into the corner or mash the gas out of it, it just helps to rein in the car a little and makes them tolerable.

...when drifting, I swap back to my DS5 and have CSA strong, because F the drift physics.

I use TC on 1, unless there's rain, then I crank it up. ABS on weak and stability off.

I wish there was a 'factory' setting for assists like in Assetto Corsa.
