Easily the Rocket '07. It's cheap to buy, cheap to upgrade, cheap to maintain and easy to drive fast. And because its easy on both fuel and tyres, you can do the enduros in it without pitting ONCE. Not to mention they GIVE it to you for free.
 
Haven't had chance to drive many cars yet, but the Ferrari Daytona on comfort softs (otherwise stock) is absolutely fantastic to drive.

I love my rocket. I ran a 2-hour mini-endurance race on Indy's road course and never had to pit. Had a bunch of people in LMP's and tuned supercars raging at my by the checkered flag.
 
I actually want to give the rocket another go, it was a blast to drive in the British lightweight series.

VW Scirocco R (OBVIOUSLY)!

Alfa Romeo Giulia TZ2 Carrozzata da Zagato (one of the most underated and most beautiful cars in the entire GT series)
 
Mazda RX500. To me, best car in the game relative to its PP (so far)
Handles like a dream. Makes the Lotus Elise 111R look average

1971 Ferrari Dino 246 GT - love racing this at 450PP against the usual suspects from GT5.
2013 Mercedes-Benz AMG VGT - Very fun to drive and has the awesome rumble of a WW2 bomber.
2011 Lamborghini Aventador - I know it was DLC in GT5 but I never got my hands on it. Incredible machinery.
