1: Definitly would have to be High Speed Ring! That was the first track in Gran Turismo 2 that I ever drove. It brings back great memories of racing with my dad as a 7 year old.
2: I think I'm falling for Tsukuba Circuit, as I have been driving there a lot recently. I just love all the banked sharp corners!
3: Tokyo R246. If you get in the Red Bull X2014 Junior, it feels like driving a proper Indy Lights car in a Grand Prix! Turns 4, 7, and 8 are my Favorite.

So hard to pick just 1.

Real:
-Brands Hatch GP
-Suzuka 2014
-Nordschleif
-Spa
-Big Willow

Fantasy:
-SSR5
-Grand Valley
-Madrid
-Tokyo
-Trial Mtn
-Deep Forest

For Drifting:
-Autumn Ring
-Stowe
-Tsukuba
-Brands Hatch Indy '80s reverse
-Streets of Willow

I love Sierra for a test and a relaxing cruise but for a mix of turns and straights I like Bathurst (As it's got the twisting turns and a long straight for car testing.) And Ascari as a place to thrash the cars around for fun.

Spa without discussion
Silverstone
Deep Forest
Laguna Seca
Midfield
Apricot Hill

disliking:
Nurnburgring (GP and Nordschleife)
Grand Valley
Indianapolis infield
Fuji
Big Willow

Anyone who did not choose Mt Panorama Bathurst is incorrect.

its not opinion that Mt Panorama it is the best track, it's simply fact.

You're welcome.

Your opinion, bud. I personally don't like Panorama.

After about 2 months, my favorite tracks seem to have changed
1. High Speed Ring
2. Indianapolis Road Course (Desperately needs an update but is fine with the Formula Gran Turismo)
3. Midfield Raceway
4. Tsukuba Circuit (Closest thing to short track racing we have)
5. Tokyo R246

Real World: Laguna Seca or Silverstone
Fantasy Circuit: Grand Valley Speedway or Mid-Field
City Circuit: Rome Reverse or SSR5
