What does the aperture do exactly?

Basically just blurs out what your not focusing on. So if your car is the focus, it will blur out most everything else on a scale of 1-100, 100 usually being to extreme to use.

I usually don't like having things blurry, unless it's extreme to give a speed effect.

Aperture doesn't give a speed effect though. It really brings out your center of focus, and gets rid of distractions. Having no aperture tends to make a photo look flat with no depth. I would suggest experimenting, because you have some good angles, but with everything in focus it really takes away from the image.
