This may be a stupid question....but how do I access the fuel map adjustment? I don't recall seeing this.

It's part of the "Multifunction Display" (or "MFD"). If you head into the controller menu and look up the button assignments for your wheel you can see how to access the MFD and change it to something more to your liking if necessary.
