G27 Question

When racing in GT5 do you have to turn the G27 wheel much more than 90deg in either direction in order to get enough wheel lock to race competitively? I am going to buy a new wheel and I do not want one with too much turning circle.

No, you don't.
In race conditions 90 is the max you should go.

is that short for 900 degree steering? I'm not trying to sound smart here, but I think this may be misleading.

In GT5, 900 degree steering is the only supported steering and unlike in PC games, you can't modify the degree rotation

I mean 90deg, in either direction in normal racing situations. I want a wheel where I don't have to take my hands off this wheel to turn, unless I am turning a low speed hairpin.
 
The only time you should turn the wheel more than 90 degrees in GT is when drifting, coming back onto the track after a off or something like that. When you are racing the wheel should never be turned more than 90 degrees because then you are just creating under steer.

I love to semi-understeer though (in FR), just to keep my rpm higher ;)
Being good at drifting (I'm good, but not pro) and knowing how to control weight transfers, you can you use this strategy to your advantage when racing, even with racing soft tires. I'm still getting there, but I did notice my lap times are much faster the more I practiced my drifting. You are right though, 90 is too much steering.

If you find you are having to turn past 90 degrees you are either going too slow....or you need to up the steering sensitivity in the driving options until you get to the point where you are not having to turn too far for slow corners.
