Gr 1 Cars sound

I think that noise is due to the hybrid system regenerating under braking. I'm not sure how well this is modelled in GTS. From cockpit cam I know the Toyota TS050 regenerates under braking and depletes under acceleration as it should. Don't know whether lifting and coasting is modelled also.

Wether this is the case with the 919 and Audi R18 I'm not sure. For me it doesn't seem particularly correct as the 919 generates from the front axle and has 8MJ of energy compared to the Audi and Toyota which generate from the rear axle and I believe have 6MJ of energy (the Audi certainly does).

I'll have to do some testing to check acceleration stats with different brake bias settings etc. to confirm whether this is the case in game. If it isn't the case I guess it explains why the whine of the MGU-K isn't present.

I have recently got Assetto Corsa for the PS4 so I'll have to give the 919 a go, not tried many vehicles yet. I agree with your thoughts on the video, the sound seems much more realistic. Doesn't surprise me in a way, given the few cars I've tried at the moment I'd say AC has the best physics on console by a mile.
