How would one get around this problem here? I want to try and avoid the bleeding of the other layers on the bodywork underneath where I have the black layers on top but I haven't had much luck fiddling with the angle and depth sliders.

Some cars have areas where it is difficult to get around this problem. The side air intake of the NSX, some places on the Fittipaldi ... In your case, maybe skewing the clear gray decal a little bit will help ?

The angle adjustement usually works fine, but the depht one is tricky, as we never know where exactly is the "0" depth point (It doesn't even seem to be the target of the "align with camera" mode, unless I'm missing something here)

Maybe Place your decal from one angle, let's say "left" Then place another decal of body color at lets say "rear" to get that unwanted part. It may not match your paint if you have a special but it'll be better than nothing.
Also, Try different camera positions with align to camera projection method before you place the decal, you can get some different results that way.
