Additionally, why the hell do I get wanted stars when a cop slams into me?!

The cops blame it on you. I find it realistic.

Me too, except for the turnstile thing. I remember cops would taunt you for standing nearby in GTA 4, but I don't know if they would ever draw their weapons.
