How can you copy one hard drive to another?

I have two hard drives now, one 120gb and one 80gb. I want to get a new one and use the old one for the PS2. What would be the quickest way to do this?

The drive is partitioned into C: and D:

It looks like I'll have to use Norton Ghost to copy it.

Can I safely copy the files while one of the disks isn't screwed in?
 
Yeah, as long as the drive is stable, you don't have to screw it in.
 
I upgraded from a 40Gb disc to a 160Gb a while back. It was a Seagate disc and there's a nify little free utility you can download from Seagate's website called DiscWizard which will partition the new drive and copy Windows, your software and all your files etc. onto a new hard disk.

You just stick the new drive in as the slave drive, run DiscWizard and when it's finished you can set the new drive as your master drive.
