Yes. However, if you delete the game data, then it will also delete the updates you installed. I only got my ps3 online for the first time in November and there was a mammoth bunch of updates to install for GT5. If someone actually wanted to go back to a certain update, they could then hit cancel after the update they wanted.

You cannot go online or send cars at 1.00 because it will sign you out of the PSN servers

If you did uninstall everything you would not be able to send the Vernon any ways. Since you must be logged into psn to trade a car, gran turismo will notice your not running the latest version and if you decline the updates you will not be able to access the online portion if the game.
