Not sure why you think field size is irrelevant...I'd assume that while processing AI, particle/environmental effects, lighting, etc all at a 60FPS target, the load on the PS3 will increase with every additional vehicle as those things have to be done with every additional vehicle.
They could probably run a smoother frame rate with better rendering with a field size of 6 or 8 but that's much less interesting in my opinion.
I guess I should say, I feel like field is irrelevant as it relates to the difference between standard and premium cars, or the ability to make them all premium. They already have 16 premium cars on the track at once, just go race online and you'll see. You probably already have.
There are no capability issues there. Forza only has 8 cars because you can apply 4,000 layers of fully customizable livery decals to each car. That's a possible 32,000 custom layers per race, GT5 has none. Forza is also at 60 FPS target. For Forza, I can see how it affects the car count. But I don't think standard models in GT5 are why they are able to have a 16 car field.
I don't think the premium cars are so demanding that it's limiting their ability to put 16 of them in one race. Like I said, there are already 16 Premium cars on track all the time online.
