These are the results of a test I did in the GT5 prologue DEMO.

Shift gear test in GT5p DEMO

It's only possible to shift gears in the DEMO as their counterparts in real tife (=irl). If a car has a 5 speed manual, you can only shift gears in the DEMO like its counterpart. E.g.: A GT-R is possible to shift gears automaticcally and with paddles irl. So, in the DEMO it's only possible to shift gears like the real GT-R. I guess this is how it's going to be in GT5.

About heel and toe. It's is possible to test heel and toe with any controller that has a clutch. BUT the games are still lacking valuable software to simulate revv matching correctly. Irl, if you heel and toe, the revvs must be exact before letting go of the clutch. Irl and in the game you let go of the clutch immediatley when you heel and toe. If you downshift without heel and toe, you must let go of the clutch slowly. If the revvs don't match irl, and you let go of the clutch, the engine will respond and so will your car accordingly.

E.g.:

1) irl, if you revv too high and you let go of the clutch, you car will accelerate slightly, because your revvs were too high when you heel and toed and let go of the clutch.

2) irl, if your revvs are too low when you heel and toe and you let go of the clutch, you engine will slow the car down suddenly and aggressively, just for an instand. It all depends on how much your revvs were too low. This mean that you will use the engine brake if you revv too low and you're heel and toe-ing and letting go of the clutch suddenly.

This problem is not simulated in a sim, so every simmer that is practising heel and toe in a game with the Gee twenty five (= G25), will think that he/she is doing it correctly.

I heel and toe irl and in sims.

E.g.: this is an example when I was heel and toe-ing in GTL, sim from simbin, using the speed 7 from BRD.

Don't mind the line I'm driving because I forgot on which track I was driving and couldn't remember the layout to the track, really! :D
