The E39 M5 gets my vote too. BMW made that car perfect in every way. I'd really like to own one someday.
 
The E39 is very nice, although I prefer a W126 Mercedes to a W124.
Audi's S8, BMW E30, and Datsun 510 are also up there.

Edit - I've been reminded of the XJR, CLS, and the Mercedes 190 Evo. I'll also add the new STS.

The 1933 Cadillac V16. From the first time I ever saw a picture of it I fell in love. It was so long and elegant it was just beautiful. I think one thing that really turns me on about it is knowing it was hand crafted and you could get certain coach makers to hand craft a custom interior. It represents a time where cars were truely art instead of mass produces by robots. I have just always been a fan of this style of cars like Duesys,Caddys, and so on.

I like the 2005 Pontiac Grand Prix GXP too.
 
It'll be the Many Cadillacs from the 50's and 60's. These are so beautiful IMO.
