You never know. Racing against the clock and the AI, is totally different than racing with other humans. I'm sure he can hold his own, but I wouldn't bet that he's unbeatable. *Just don't let him get a lead, lol *
As far as changing your paint scheme goes...
1. Go online and get into a group of people to race with.
2. Select the car that you actually want to use.
3. Now, select the car with the paint scheme you want to use for the first car you selected.
4. Now exit out of the group you're in and go all the way out to the single player game menu.
5. Go into Time Challenge.
6. Within time challenge, go into car challenge.
7. Once in car challenge you'll notice that it has the group that you had selected last online already. Go to the group that you plan on racing with online and ONLY select that group. (Do not select the actual car.) Once the scoreboard has loaded for that class, back out to the main menu.
8. Jump back online and select your car and you should be ready to go.
Couple of notes with this.
1. You obviously have to be playing with a group or hosting matches that don't have a defined class they are racing with. It must be open so that you can jump back and forth through the car classes.
2. Any cars with stripes in their paint schemes can only swap paint schemes with other cars that have stripe paint schemes. I.E. - the AC and the Viper.
And just a personal note: I normally create a group, set the number of players to 2 (with one saved for friend invite). I do all the above mentioned steps and get my car ready to go in that group i created then when i hop back on i jump into a group to race with. This way you don't hold up races while you jump back and forth to accomplish this. Just a sidenote.
