I'm stuck on 3 races:

The Gallardo Trophie: Have a 702hp Gallardo with sports soft tires and the car handles like 🤬. It takes corners WAY to slow and wide while every other car takes the corners fast and narrow.

Historic Racing Cup: Need to know what car is best to use...will probably just do the birthday thing whenever PD gets the servers online.

Gran Turismo Allstars: What car should I get for roughly 1 million Cr.? Or just do the birthday thing for the 787B...

Jeez. GT5 was enjoyable up to expert races, now it's pot luck to win the Gallardo event and other races. Help please!

I found the Gallardo Event pretty easy, done with a stock Gallardo... So the best think I can suggest you is to buy racing tires, if you're not confortable with the Gallardo's handling.
For Historic Racing Cup, you can use the Countach fully tuned with a spoiler, it will do the race pretty well, but take in count that you will face some race cars, so you have no space for errors.
Gran Turismo All Stars, I just used the Toyota Minolta 88 C-V that you can win in A-Spec Like The Wind Extreme event. I think the Mazda Furai Concept that you can win in the B-spec NRA Cup can do the work, but obviously with the minolta is easier.

Put the wing on it and crank up the downforce. It'll be fine.
Also if you are talking A-Spec buy some race tires the softer the tire the better the grip.

I'll try the racing soft tires on the Gallardo, just a chicken-**** to put 36,000 tires on my car and be scared of it performing worse.

Already tried a wing, but I actually used less downforce.

EDIT: Just stuck soft race tires on and pounded the competition. Thanks guys :P

For the Historic Cup, I used the Fully Tuned Countach at teh advise of Morsola. He has a thread in here with the tune specs somewhere. And for the All Stars, I used my RM'd ZR1.
