Playing through GT1 on PS3 and having good fun.

This is exactly my first impression too. After racing in GT4 for many years (in which tons of understeer dominates) and then GT5 for about a decade, going back to the first game was pretty shocking.

There's not much you can do with settings, other than get used to this game's extremely nervous steering inputs. Doing those License Tests helped me a lot.



That is a video in which the guy gets all Gold licenses. I've been watching that video on one TV screen while having my gaming TV on, so I can compare where I should be on the track. Trust me, after trying for golds (or at least silvers) dozens of times, you'll start to get the hang of GT's extra steering nervousness.
 
"Nervous" is a good way to put it, the game's force feedback is really good considering the game's age. I was pleasantly surprised with the road feedback.
 
Are you using a wheel or controller? Sounds like you have a wheel.

If you use a controller, you can switch from digital to analog steering in the game's Options menu. The game gives us digital by default, but analog can be toggled on in the menus. I'm not sure if a wheel has options like this. If it does, maybe you can find steering settings which make the car not steer so forcefully.

Controller and I use analog, the road feedback is excellent better than some modern games I've played

I have just started playing GT 1 again after learning that I could use the PS3, all I can say is how did I get any were using the original controller... soo all over the place.
