When you first start the game you have to chose between the 3 handling models (which aren't different handling models but different settings regarding assists and damage)

As far as I know, handling selection doesn't really do anything anymore. I mean, if you don't select pro handling, you'll just get some assists enabled by default. To disable assists (or use real ones) go to Options-Gameplay and adjust assist settings and other settings there. You don't have to do anything from scratch. After that you'll have the same handling as Pro
