Yup - just need a PS1 compatible wheel - there's thousands of them out there.

i think the nascar wheel is supposed to be pretty good. i think the v3 is said to have problems.

I've got a Jordan grand prix racing wheel 2 which works with most games but on my gt2 case it doesn't say if it can have an optional controller.
Will it work on gt2?

Should do - I had an old Madcatz I used quite successfully on GT1 and 2, both on the PS1 and 2 (not GT3, mind, although it worked on RR5)
