I was thinking exactly about a list like this yesterday, to add to the realism of this game. It's not tuning the transmission as those links suggest, it's knowing which cars use the H-shifter, which ones use the sequential shifter with the stick, which use the paddles and which are automatic, to play accordingly with the G25.
The cars with paddles should not be hard to identify, it's those in which the driver's hand does not move.
I assume every car with available clutch on GT5P uses it in real life, and since the clutch is only available with the H-shifter, cars with clutch use this transmission.
I don't know if there are cars with sequential shifter on the stick, but I recall the Amuse S2000, where the driver's hand moves but the H-shifter does not let us use 7th gear.
Lastly, I don't know if there is any exclusively automatic car in the GT5P car list. I know every car can be used as manual in the game, but is there any which in real life is only automatic? For example, the SL55 is an automatic car, but it has paddle shifters, so I wouldn't use it as auto.
Then I remembered, how about doing a driving aids list, stating which cars have which electronic aids in real life? That would be harder, but also it shouldn't be in this thread.
As for the GT-R, it handles wonderfully with no aids, or it used to, as it seems like it was a bit modified by the last update, and I didn't try it recently so I can't really say anything about it.
As for driving aids, it wouldn't be only ABS, as many modern supercars have sophisticated systems like traction control or ASM.
by the way...where do you set ABS on/off in the game?
it does not show in my options menu...only ASM, TCS and the like.

ABS is on the quick-tuning menu, which is unlocked after you complete the A events. TCS is also adjustable here. ASM remains only on driving options. The Z06 drives like on rails compared to the GT-R? Are you using professional mode without aids?

oh ok...its in the unlockable menu. thanksI think I finish the A-class events today or tomorrow.
So...in the end, what do you think - as the real life GT-R relies on and uses so many computer controlled features and driving aids, should be at least ASM on in the game to simulate the cars handling as best as possible?

You can turn it off anytime with the real time adjustment, you dont need to unlock QTS then.
