Used cars dealership in Gran Turismo 7

The Stealership has been very stagnant for me. For a few weeks it has been only offering cars that I already own. I have 296 cars in my garage, Car collection is 53% (283 of 533). Is it just luck of the draw or typical to get to a point where the used car experience is mostly complete in the game?

There are not a huge amount of used car, so you will feel like that more and more.

There are only 84 cars in UCD
 
Today I bought another Sprinter "Trueno" 1600GT because it came in a different color (High Metal 2-tone), and upon inspecting the car, I discovered that the interior is blue, unlike the red interior that comes with the white version.

I love these details.

If I'm not mistaken, the 300SL also has interiors in different colors. Are there other cars like this in the game?

Aston Martin DB11 (interior + wood/carbon trim)
Porsche 991 GT3 RS (Lava Orange comes with matching seats)
Ferrari F12berlinetta (stitching changes colour depending on exterior colour)
Toyota GR Supra '20 (default blue version is some special version whose name I don't remember, blue accents on steering wheel)

Pretty sure there's more but I don't remember right now.

One of the NSXs in the UCD does that as well...
 
Off the top of my head, the Audi R8, the Mercedes SLR, the Abarth 500 and the Honda Type R models - white tends to have red seats and white wheels, whilst the other colours have black seats and silver wheels.
 
I am currently working on a full 20 car grid based around the Toyota AE86 N2 race series out of Japan. I just bought 10 Sprinter Trueno's. Now I just need 10 Levin's. Any idea when it's coming back around in the UCD?

Next month (full month from now).

Unfortunately the wait grows every time they add a new car from the period able to be featured in used cars (every new car until '09 that's not in Legends).
 
This is a pretty high valuation. Might be closest I’ve seen to an original Cr.
