Couldn't answer that, I may bash the game but my favourite car changes almost every time I play the game! Currently just got the Toyota GTone (finally) and loving it.
Race modified Corvette. Compared to most race cars it's pretty low cost, and it's a very forgiving car. Acceleration is is great, breaking is excellent, and the handling is superb. There's other cars that beat it in a lot of area's, but for overall enjoyment it's my personal favorite.
Audi R8 Race Car '01. Because with this car i have way better lap times when comparing it with my other 10 LMP / group c cars. This car seems to be perfectly balanced (even with default settings).
The GT by Citröen. It's not as fast as some others but in it's class it's holds it's own. And besides it looks pretty effin cool. It gets my vote as the next Bat Mobile in the Dark Knight series.
Suzuki ESCUDO dirt trial car, this is just an epic car, unbelievable easy to power slide and has epic acceleration and extreme grip, and you can drive it on dirt

In terms of enjoyment? BMW M3 GTR. Hands down. Ferrari F430 Scuderia a close second.
