There's plenty more good ones, I just can't think of them right now.
My best recommendation would be the Charger. I haven't seen any of those at the drag strip (except for Route X, doing top speed runs). Despite being shaped like a brick, it has an incredibly high top speed considering it's a sedan. Not to mention, it's starting out with 470HP. The first thing you need to do is take off the spoiler. But it's all up to you after that.
As for the Viper, I did the ACR, and it's unbelievably powerful, but also pretty expensive. The '02 Viper GTS does pretty well, too, just not as well as the ACR.
I've never tried the Boss or the Challenger, but they seem to be very well-suited for drag racing.
and yes, I am looking to make my own tunes but I'll definitely take note of that thread
