This is a PlayStation thing not a GT Sport thing. When your PS4 updates a game it creates a back up of that game, so there are two copies of the game on your drive while it updates. As GT Sport is quite large you need a lot of space to do the update. RDR2 (and other large games) have a similar problem.

If it's taking 19 days then I'd suggest your console so sucks.
