Anything by John Williams... the greatest composer living!!
Examples: E.T., Jurassic Park, Indiana Jones, Dances with Wolves, Star Wars, A.I.
John Barry did Dances with Wolves, along with some of the James Bond stuff. He's really good.
Then there's always Ghost in the Shell and Princess Mononoke.
Both excellent soundtracks.

Another great one, but Vangelis's best work is Chariots of Fire.
I'd say Star Wars and Army of Darkness- I am a big Elfman fan.
Elfman did better work for Spiderman, Batman, and Edward Scissorhands (which is some really great stuff).
Requiem for a Dream. Nothing comes close.
It has one good track. The rest are repeats. It's like Last of the Mohicans in that respect, in that its a one trick pony.
I have trouble voting for just one, so I figured I'd have to mention a few others

Lord of the Rings - Howard Shore really put together some beautiful music for that trilogy
Edward Scissorhands
Final Fantasy Video Games - Nobuo Uematsu put together some absolutely unprecedented video game music that really set these games apart.
Matrix - Don Davis has some great stuff in these soundtracks - it's not all techno, although the techno is good too.
Bram Stoker's Dracula - Some absolutely wonderful music by Wojciech Kilar
Medicine Man - Goldsmith lays it down.

I couldn't see only putting one type of soundtrack in first place. I felt like it wasn't fair to compare Rock with Orchestral. And then I couldn't figure out if Braveheart or Gladiator was better.
