If i got gold in one race of the championship and finished below 1st place, so didn't win the championship, when replaying it, is there any way to skip the race i finished in 1st place, and it using my previous result which was 1st place.
No because a championship is who can be the best out of all the races combined against the current opponents. When you retry the championship, the opponents change, so the new opponents don't care if you won against someone else. Does this help?
