I know I'm late to the party here, but Mafia II has the best police physics of any game out there.
-At 1 star, they look over your ID, let you go (If you bribe them) or try to arrest you if you run
-At 2 stars, they try to catch you, put you in handcuffs, and either you bribe them, try to run (Get 3 stars) or get arrested
-At 3 stars, officers now open fire with pistols and shotguns (this only after you've resisted arrest or they saw you kill somebody)
-At 4 stars, the machine guns come out and you better run or fight, or you're dead
-Also, after you evade them you and your car (if you were in one) become wanted, and you will be detained if they see you again
-Also, cops will pull you over for speeding/traffic violations.
-Police don't have magic cop cars
