It's basically pulling the hand-brake (e-brake) to initiate drift, and then maintaining and controlling the drift using throttle, and of course counter-steer when needed.
I myself prefer feinting and linking, but for those really narrow hairpins, the hand-brake (e-brake) comes to good use.
