Oh my, most of them are really good...
The 787B gets my vote as best all-around, though the R390 is technically faster around the track. The Gillet has extroardinary handling, probably the best of the bunch. The GT40 is quite nice... very well-rounded, even for a car that is 40 years behind the rest. The ZZII is the best non-race car (even though it does have a racing tranny and suspension) by far. The Speed 12 is a beast... only for professional drivers, thank you very much.
