Late response but I think its more of a collector's piece than anything. If you want the Install Disc, then be willing to spend at least $100+ for it (they appear occasionally on eBay and Yahoo Japan).
Otherwise using a Jailbroken PS3 or Emulation is your best bet.

Thanks for the response. I did actually manage to get my hands on GT HD. I do a couple of laps for the leaderboards every now and then. Shame that the actual planned GT HD never happened.
