The same way you know in any race, with a timing screen. The transponder never lies (unless you have a dodgy transponder).

If you mean the spectators, there's not a chance at all unless they have live timing - but let's face it, isn't that the same for any kind of endurance race as a spectator?

Another Top Gear episode idea gone public, and it could be a day-off-type race for BTCC drivers, if your last name was Plato (yeah I went there). It's a rather large-sized version of banger racing, but I can see that it's still possible to PIT manouever people if you want to, haha.
