I had a go at the demo today and being pig headed, I mucked about with the aids options and controls. I found using R1/R2 for gearing helped a great deal with the number of fingers needed...I like the idea of having the brakes controlled separately, and the manual transmission. I don't have enough fingers to turn, lean, brake front or rear and change gears all at the same time though.
The whips look a little pre determined, you just lean and it does the whole motion from there. I highly doubt that anything would be harder to replicate virtually than motocross, and this seems like a solid effort. Will probably pick it up when the price drops a bit.
Go with pro physics and never look back, as bevo said. Not only does it allow you to have more control over your bike, but you can and will get faster as well - but that might just be more of a personal preference.I had it on medium physics which meant a lot more interation by me for cornering.

Just noticed there is no clutch button, seems a bit weird. Anyone with the full game played through the career mode yet?
