Probably a dumb question but, how do I get into a casual race with just NASCARs in? When I use Arcade Mode, I just get loads of random cars of a similar pace...

Do a one make race.

Just use the recommended cars in arcade mode (AKA either the Jeff Gordon #24 car, or the Dale Jr. #88 car). Most tracks will then support a 16 car NASCAR field with everyone driving different cars. (Well almost, since there are only 11 NASCAR cars and 16 cars in the race, there are some repeats).
