Theres a nice jump right at the start of the capri rally in reverse if I remember - Just go for about 30seconds and you will find it after the hairpins.

How'd you get the Renault to nose dive like that?! Isn't the engine in the back/mid? Did ya weight the front or throw the back end up somehow?!

There is no setting for a wheelie, its just taking a pick when your landing a jump or hitting the rumblestrips (candy canes)

i dont know if its the same settings as the gt3 escudo wheelie settings but try mess around with the suspensions settings and u can pull real wheelies not just crashes and do 400mph+
