How about parity racing?

It gives the opportunity to the most equal and varied racing.

Here's how it goes.

1. Select a track
2. Set a time (like 2:05 at Indy Road course).
3. Let the players build their cars, whatever car they want.
4. Whoever goes faster than the agreed time gets DQ'd or receives a considerable time penalty

After a lot of testing, seems that all the GT500 cars are fine as is after an oil change, the NSX might need a little something, but with a good enough driver it can wipe the floor.
