I'm very sick of looking at my bright yellow gloves.

Funny you say this. I actually had to think very carefully about choosing my suit because the cockpit view does not feature 1:1 steering animation.

I purposely chose the ONLY suit with all black gloves and black arms, just so it blends in with the cars interoir and is least noticable.

I did this with the hope I would notice the inconsitencies of how little the driver turns the wheel less than if I chose coloured gloves.

However I find that black arms and gloves makes the effect worse, you feel even less sensitized to steering movements and the whole thing feels even more numb.

I really thing PD should give you the option of picking your racing suit, at least in online and multiplayer modes!

Could it be purely for the cut scenes involving the driver?

P.S. No. You can clearly see it in game as well. Everyone here saying its only for replays and it doesnt matter otherwise is wrong .

No, because the cut scenes aren't pre-rendered. The cut scenes can have him appear in any color that he appears in elsewhere. If they gave you the option of choosing millions of color combinations, the cut scenes could show him in all of those combinations.

A simple button in the garage could solve this, making everyone happy.

More options would be nice too, like some historic and/or special unlockables, like F1 pilot's helms, Stig suit, etc.
