1970 Mercury Cougar XR7 Houndstooth. Limited to the XR7 and offered for a single year with either a black and white or a brown houndstooth pattern vinyl top and interior. Not sure how they break down but the brown seems to be more common, while I think the black and white is more attractive.

The venerable Fiat Panda 141A (1986-2003) NEVER had air conditioning in most of the markets it was sold in, except for Japan of all places; this is a later Selecta (with an ECVT, another rare option outside of that country) model from the late '90s equipped with AC:

I must imagine how perfomance would be affected, since the fastest OG Panda tops out at 54hp (!) from a 1.1l 4 cylinder .

More sliding ragtops. RPO CF1 was the Sky Roof option for Novas in 1972 and 1973. About 10k were built and the first year accounted for more than two thirds of total production. These were different body shells, even. Here's a later car with matching tan vinyl roof and slider.

Nice Nova. Always hated those fabric sliding roofs though- I’m not even going to tangent on the above roof glass ones. They’re like toupees for cars.
