Here is a video of my replay against the demo. Ghost car is me and the Solid one is the demo car.

Here, I just made the video smaller in resolution and AVI format.

GT-ONE S-Licence

You see in the clip, you don't always have to be faster than the demo car. I was once 3 cars length behind but at the end won by 4 cars length.

Hey, now that's cool man. It's a good example of knowing the computer's weaknesses and taking advantage of them. Don't sweat it until the end.

I honestly dont think that the liscense tests are done by computer AI. I think they are done by real people, same with the TT in arcade mode. They are to good of a time to be driven by the lousy excuse for AI in GT3.

I don't know. Take a look at the Arcade->Single race->Professional->Mid-field race. The AI in R390 is a very quick driver and you can't beat it with the same car without tuning, but it sometimes falls out to the sand at the bend just before the second tunnel.
I think the AI is good but in some cases, it's not perfect. The guys have built this game, I am sure they can make the computer think smarter than average people if not smarter than them.

No matter how much you tune your car, it appears stock in the arcade mode...

You're kidding.....if you have a R390 Race car in your garage, put a turbo in it, give it the lowest height, stiffer suspension, different gear ratio, ... ,etc. In Arcade->Single Race->Professional->Mid-field course->Home Garage and pickup your tuned R390.
Then you will know they are no match to yours.

I think the big word there was "appears". I know in the NTSC version, somtimes the color is off too..
