what are the default driving options?

Driving Line: On in the tracks that I don't know yet.

ABS: 1 in new cars. ABS: 0 in old cars and race cars (or cars that don't have ABS IRL).

Everything else (SRF, TCS and others): OFF

I think he's talking about the default before you change anything.
Which, as @HBR-Roadhog said, is TSC 5, ABS1, driving line on.
 
What do most people do?
I know this is a nooby question but what do all of them do to the cars. I know most but mean as in GT does it help or not.

If your a skilled driver, everything will make you slower, except for ABS 1, and SRF. But since SRF is a fake driver aid that increases your grip, it is frowned upon by most drivers.
 
Yeah it depends on the driver and the car. Using TCS 0 will make you faster if you can handle it. Is very tricky on high powered high torque RWD cars especially at low speeds in low gears and tight corners not to mention wet conditions.

On the slower less powerful cars, AWD and FF cars it is much easier to drive without TCS.

Personally I use some TCS on some cars and 0 on others, ABS 1 and simulation steering with a sensitivity setting of 7
 
With the exception of 24 Minutes of Le Mans have always kept the Driving Line: Off
All License, Career and Missions TCS: 0 ABS: 1
Since I use a Controller will turn SRF on for some high end cars.
 
So traction control makes you faster. Tried it on gt5 today and think in gt6 I'll go for TC at 1

I almost always had TCS set to 1 in GT5, but in GT6 I'm finding it easier to control throttle. Some of this is the new physics and some of it is better and more informative tire sound. Try it out at 0 and see how it goes.
