My brother currently has a Golf R (with an ECU tune) and previously owed a C4 Corvette and two other VeeDubs.
Can really only comment on the Z since it's the only car I've driven hard / fast on a track and GT6's version feels about right. Despite being a FR it slightly under steers due to the factory staggered tire setup. In fact most cars understeer a touch in stock form as a safety measure, the idea that stock cars (even powerful ones) slide and drift wildly throughout corners is a bit unrealistic. What you see the guys doing in Top Gear is purposely tossing the cars off balance to make entertaining TV. Getting the rear of the Z to kick out is easy... it just requires a sharp, slow turn with a full throttle exit. Or turning OFF the VDC (traction control) or a quick downshift. But when driven properly (slow in / fast out) it's not smoking the rear tires and getting sideways.
