My list would be the long fast right hand 180 degree at Tokoyo R246 IIRC it is turn 4. Getting a car set up so it doesn't burn up the front left as you power through the curve is a challenge but once set up you can really fly past the AI cars.
 
The really tight hairpins on Cape Ring which are very wide.

Take a 4wd car there and just attack it way too fast, but yank the handbrake and disappear in a sideways cloud of smoke of epic proportions...
 
The Right hander directly after the tunnel in clubman R5 is an epic corner!

That excellent short track doesn't get enough love.
 
Turns 3&4 ( uphill s-curve) at Grand Valley. Shows off a cars grip and stability by shifting the cars weight back and forth, and cornering under acceleration while cresting the hill. BMW M3 cpe is one of my favorites at this corner.
 
Nurby - Schwedenkreuz - how fast can you take it in an LMP without flying to the scene of the accident?

Nurby - Mutkurve - at the end of Kesselchen - get the braking right, you can sail round at high speed while sticking a load of time in the bank.
 
I'd much prefer it if tracks had more evocative corner names.

My own favourite bits of Asphalt are...

Gravenoir at Clermont Ferrand
- This track is like the Nurburgring only faster, with a few Volcanoes near it. Such an epic location for a Grand Prix, but alas, no more. The Corner I liek was at the far end of the track and was a blind comitment corner located after a series of fast testing twsity bits. Very easy to get cocky and cut a corner and come to grief.

Suicide Chicane at SSR11
What is not to liek about a unyielding head on collision with a concrete wall at an oblique angle? Strangely the GT series has avoided the original layout.

The Gravity Cavity at El Capitan
This rollercoaster section demands a well sorted car and a very settled stomach.
 
Most favorite turn is the sharp turn at the bottom of the backstretch of trial mountain, with the proper entry you can drift way below the line and come out faster than if you were in the line.
Least favorite and possibly speaking for many of American Race fans is Daytona Turn 3. I lost my hero there 2/18/2001.

In terms of single corners? Simple, the right hand kink just after flugplatz on the Nurburgring

Eau Rouge at spa, hands down... The only corner I know of that causes F1 cars to bog down in real life, and give multiple G's of VERTICAL compression.
 
I also think Laguna Seca's corner was pretty good.

Swiss Alps' last few corners were good too, going high-speed downhill and drifting round them was fun. I miss that track...
 
My favourite corners are found in Fuji. I began to love them when I finally managed to master that track back in the days of Prologue with my SPEC II Ford GT Test Car (lift off oversteer... :O ), before that I despised them.

I love some of the various corners here because there are so many lines to take them in and so many styles to tackle them. Every single car takes a different racing line around that track.
 
Turns 1, 2 and 3 from Trail mountain and the Schumacher S at the Nurburgring GP.
 
Every damn corner of the Nordschleife. I'm sure I'm not the only one, but this is a situation I refuse to be hipster, I love the track too damn much, and don;t care how many other people like it! Screw you my hipster self!
 
Cape Ring Full Track: The series of turns after the loop until the starting line.

Trail Mountain: The high speed uphill section at the begining, until the right hand turn after the first tunnel.

Nurburgring: From Flugplatz, going through Aremberg, all the way to Adenauer Forst. Those are my favorite sections of the old ring.

Route X: The part where you go really fast.

Top Gear Test Track: From the Line all the way to The Follow Through.

Le Mans track: From the Porsche Curve to the New Maison Blanche turn.

If I think of more turns that make me smile, I'll put them here.
 
My favorite has to be the 2-3 corner combo leading to the first tunnel in Trial Mountain. Cut across the curb a bit and get some decent amounts of airtime. The left hander before the last tunnel is cool too, lol it has gutters so it makes some good initial d shots

Also have to say i love the first part of the 'Ring from the start/finish until just after Flugplatz
