Cusco Impreza, followed closely by the RE Amemiya RX-7. In fact, every GT300 car but the Momo MR2 and Weds Celica are great cars.

The BP Apex Trueno is fun to drive.
The Daishin/Xanavi Silvias are nice, too.
And the Trampio FTO is a giant killer; great little FF car.

Yeah, that's pretty much my assessment too. I can drive the Weds Celica pretty quickly, but its great weight makes it ineffective.
I am also very fond of the [R]30 Skyline Silhouette. It is a bit of a "ballet dancer" right out of the box. But once it is tuned and has super soft rubber all around, it's competitive in the GT500 series, if a bit off on the power.
The Audi TT racer is also a very suprising car that is qualified for the GT300 series.
