Fueling times vary widely by racing series. In F1 when they refueled mid race, and in IndyCar, they can cram it in at lightning speed. In most sports car series I've seen it takes significantly longer, often 30 seconds or more. In less high-end series the equipment is often closer to standard street car equipment and will take even longer. At the Nurburgring 24 hours the cars actually do use standard street sized fuel hoses to refuel, and even have to queue if there is no pump available.
It might be a nice touch if the different cars in GT5 fueled at different rates, but when you consider how you may have a wide variety of very different cars in a race it kind of makes sense to leave them all at a set rate.
