It was the only thing I had left that made any kind of sense. But how do you use that word? "That tomato is RIPER than the other one" To me that should be "That tomato is more ripe than the other one". But what do I know, I didn't do that well in English in school.

They're both acceptable comparative adjectives. Personal preference. I'm inclined to use "more ripe."
