Both of the yellow areas are outside of the apex, so you probably lose more time cutting through them than following the proper line.

I always take that line when I'm solo, but I hesitate if I'm online.
The same can be said about the gray spot on Grand Valley, three corners before the first tunnel.

Track edges are typically defined by the FIA curbing... only lines on a race track that really matter are pit out., and lesser degree 'pit in'.
Typically, but not always. There are plenty of tracks where entrances/exits of different variations or other access roads are delimited by do-not-cross lines.
At other tracks certain areas are considered part of the normal surface (see the delimited tarmac to the right of the exit at Monza's Variante Ascari).
The simple(ish) answer is that it depends WHO you're racing, WHERE you're racing and WHAT you're racing.
My rule is 2 wheels on a hard surface at all times.......

Good rule! All race-drivers are trying to drive as straight a line as possible in RL. If you offer them another inch in track-width, they`ll take advantage of it.
