A couple of great covers done in completely different styles (bluegrass and mariachi respectively) to the originals:

Chris Thile - Heart in a Cage, originally performed by The Strokes

Mariachi el Bronx - I Would Die 4 U, originally performed by Prince

So much better then the original...

Metal bands always do it better.

EDIT:
One of the greatest riffs ever... Done perfectly by SG

Absent Elk doing a Girls Aloud track, definitely worth it even if you hate the original!

Two of my favorites. The Black Keys cover i such a different style to the original by Bob Dylan but it definitely works.

Best cover of this song by far.

Either My Chemical Romance covering what I believe is Bob Dylan's Desolation Row or Green Day covering I Fought The Law

One of my favorite Lennon track.

Rockin' track originally by the Cardigans. 👍

Come on!

My votes go to:

Metallica - Turn the Page (John English cover) or Tool - No Quarter (Led Zeppelin cover).

I believe Bob Segar did Turn the Page first.

Might have missed them when reading this thread but:

Blinded by the Light by Manfred Mann was a Springsteen song. I really like that version... but hey, I'm older so that's why I think of it.

Entire albums of really good cover tunes:

Tribute to the Gods by Iced Earth. Great band!!!

Working Man: A Rush Tribute

Nativity in Black: Black Sabbath tribute

Stone Free: A Tribute to Jimi Hendrix

Covered in Nails: NIN tribute

Metallica-Am I Evil? (Diamond Head)
Thin Lizzy-Roaslie (Bob Seger)
Judas Priest-Diamonds and Rust (Joan Baez)
Anthrax-Antisocial (Trust)
Pantera-Planet Caravan (Black Sabbath)
Machine Head-The Sentinel (Judas Priest)
Children of Bodom-Rebel Yell (Billy Idol)

Red Hot Chili Peppers - Higher Ground - was their first significant hit and is just amazing played live!! :D
