If you go to Play Career > Cars > Buy Cars > Search, (on the far left), it tells you how many purchasable cars you have under "Filtered Items". In my game there is 653. I'm missing 7 cars from the May Top Gear pack, bringing the total to 660. So, 660 + 17 unicorns = 677 total vehicles.

Also don't forget about the free cars T10 gifted us. That's at least another 5-10. So maybe around 680-685??? Seems like there are more I am missing.
