How they expect anyone to drive that way without Brake and throttle assists is beyond me. How much fun would a 30 minutes+ race be? Probably zero.
Re edit 1: It might be like the ipod version of shift. When you are touching the screen it continues to accelerate until you take a finger off, then the brakes are applied.
Re edit 2: Sure, that would be very cool - but keep it as a separate section.
It looks more like a 'try it without the investment' scenario, but without a proper controller it certainly will not highlight the physics at all - in fact it would really only encourage me to get into GT5 / Forza... etc. if I really wanted to get into virtual racing without a wheel.
Edit: I haven't figured out how he's doing anything except steering in that video.
Edit2: That being said, I'd totally play an iRacing Mobile game like that on a tablet or whatever.
