They're hard to see, but the eccentric gear in the middle has numbers on it for 15, 30, 45, 60. So you just guess from there?

Edit: Every 2 teeth is 5 minutes it seems...

They do appear to be renderings, which kind of answers the question of how it would work, because I'm not sure it would... I mean what keeps the rotary piston on the central gear?
 
Those are really well-done 👍 And I've been staring at that watch forever now and still can't wrap my head around how it works...
