Sorry for the double-post but I was wondering if anyone knew the keyboard shortcut for rolling the F5 camera, or if it's even possible?

You mean press F5 and then get a "free cam"?
It is necessary to edit 2 files:

1 - assettoCorsa/system/Cfg/camera_onboard_free.ini
Find:
SPHERICAL_COORDS=1
Change to:
SPHERICAL_COORDS=0

2 - assettoCorsa/system/Cfg/assetto_corsa.ini
Find:
ALLOW_FREE_CAMERA=0
Change to:
ALLOW_FREE_CAMERA=1

Then you press F5 and use the keys:
W, A, S, D to pam
+ or - from the num keyboard to zoom (this option is not working when the new photo mode window is opened, first you have to make the scene and then open the photo mode to take the shot)
F, G to rotate
You also have to use the mouse to help the positioning.
